"Costas Spiliadis has spent four decades perfecting the art of the Greek table. His Hudson Yards outpost is the most spectacular expression of that vision yet."

There is a particular kind of confidence that comes from knowing exactly what you are. Estiatorio Milos has never tried to be anything other than the finest Greek seafood restaurant in the world — and in that singular ambition, it has achieved something rare: a restaurant that feels both timeless and completely of its moment.

The fish arrives daily from the Aegean and the Mediterranean. It is presented whole on ice near the entrance — a ritual that doubles as the menu. You point, you ask what arrived that morning, and you trust the recommendation. The kitchen's job is to get out of the way. Charcoal, lemon, cold-pressed olive oil. That is the entire philosophy, and it is enough.

"The whole branzino, grilled over charcoal and finished with nothing but lemon and olive oil — a lesson in restraint that every chef in New York should study."

Alyssa Ross · TastesOf

The room itself is a statement. Two stories of soaring glass frame the Hudson Yards skyline, and the marble-and-white interior channels the light of the Cyclades into the middle of Manhattan. It is a room that earns the word "beautiful" without apology. The service matches it — attentive, knowledgeable, and unhurried in a way that feels genuinely rare in New York.

The wine list is a serious document. Greek bottles — Assyrtiko from Santorini, Xinomavro from Naoussa — sit alongside a thoughtful international selection. The sommelier's guidance is worth taking. Ask for something you have never tried. You will not regret it.

What to Order

Whole Branzino

Flown in from the Aegean, grilled over charcoal and finished with nothing but lemon and cold-pressed olive oil. The definitive dish of the restaurant — order it and nothing else will matter.

Lavraki Tartare

Sea bass cured with sea salt, dressed with capers, shallots, and a drizzle of Kalamata olive oil. A study in the purity of the Mediterranean.

Grilled Octopus

Slow-braised then charred over open flame, served with fava purée and a splash of aged red wine vinegar. Tender, smoky, and deeply satisfying.

Taramosalata

House-made fish roe spread, whipped to a silken texture and served with warm pita. The benchmark against which all others are measured.

The Verdict

Estiatorio Milos is not a restaurant that needs to try hard. It simply is what it is — and what it is happens to be extraordinary.

If you eat in New York once this year, make it here. Order the whole fish. Trust the sea.
